Pasta with Pesto

Quick, easy and delicious.

Ingredients

4 oz (dry) Angel Hair Pasta

1/2 packet McCormick Brand Pesto Mix

1 TBSP Olive Oil

Directions

Cook pasta until done.  Drain water except about a quarter cup of water.  In a separate pot mix the quarter cup of water, oil and pesto mix, then once combined mix back in with the pasta.  This can all be done in a one pot meal, but I found that the pesto mix, oil, and water combines better when mixed separately.  

Time

15 minutes

   

Shepherd's Pie

A little more adventurous meal requiring a couple of pots.

Ingredients

1 packet Idahoan Brand Four Cheese Potato mix

1/4 packet Richmoor brand peas and carrots

1 packet Richmoor brand dehydrated beef

Directions Bring about 1 cup of water to boil; mix in beef, peas, carrot. Remove from heat and let stand for about 10 minutes to hydrate.  After about five minutes start making the potato mix according to directions in a separate pot.   Drain water from beef, peas, and carrots.  Take mixture and pour on top of potato mix or make pocket within the potatoes and pour inside.  Option: Take a half packet of brown gravy mix (Knorr or McCormick brand) and stir into the beef, peas & carrots mixture - This is tasty but I feel it make it a bit too salty at times.  Serves 2 medium portions or one good hearty portion

Couscous with Pine Nuts

A simple one pot meal made from a prepackaged mix

Ingredients

1 package Near East brand Couscous with Pine Nuts

2 oz Pine Nuts

Directions Boil 1.25 cups of water and pour in seasoning mix and couscous.  Remove from heat and let stand covered.  After 5 minutes fluff with fork and stir in extra pine nuts.  Let stand another 5 minutes covered.  I add in the extra pine nuts since there are so few with the mix.  It also adds extra protein.
Time 15 minutes
   

Lemon Couscous Chicken

This came from Backpacker Magazine - I just modified the recipe a little.

Ingredients

1.25 cups water

1 TBS Olive Oil

1 package Near East bran Roasted Garlic and Olive Oil Couscous

2 Cups dehydrated broccoli (www.harmonyhousefoods.com)

1 package or can of chicken (about 8 oz)

.25 Tsp lemon peel

 

Directions

Soak broccoli in water for 10 minutes.  Remove and use a measured 1.25 cups of water and make the Near East couscous according to the directions. When removing the boiling water and after stirring in the couscous, add broccoli, spice packet, chicken.  Let stand until couscous is done.  fluff with fork.

Time

15 minutes

 

 

Orzo with Sun Dried Tomato

This came from Backpacker Magazine - I just modified the recipe a little.

 

Ingredients

1.25 cups water

1 TBS Olive Oil

4 ounce Orzo

2 ounce chopped sun dried tomato

2 ounce pine nuts

1/2 packet McCormick Brand Pesto Mix

1 Tbsp Parmesan cheese

 

Directions

Cook pasta until done.  Drain water except about a couple tablespoons of water.  Mix the quarter cup of water, oil and pesto mix, sun dried tomatoes and pine nuts in with the pasta.  This can all be done in a one pot meal, but I found that the pesto mix, oil, and water combines better when mixed separately.
